    Resep sambal lado mudo buat om Candra ( Sambal ijo versi Padang )

    Om Candra...kebetulan pas tadi saya bongkar2 primbon masak jaman saya masih kuliah dulu, saya nemu tuch om resepnya sambal ijo versi Padang.
    Silahkan coba ya oom.....



    Sambal Lado Mudo ( sambal ijonya Padang )

    Bahan :

    14 buah cabai hijau, dipotong-potong
    10 buah bawang merah
    2 buah tomat hijau, dipotong-potong
    1 sdt garam
    ¼ sdt air jeruk nipis
    3 sdm minyak goreng

    Cara Membuat :
    1. Kukus cabai hijau, bawang merah, dan tomat selama 5 menit. Angkat lalu
    tumbuk kasar.
    2. Panaskan minyak goreng lalu tumis sampai layu. Tambahkan garam dan air
    jeruk nipis. Masak sebentar dan siap untuk disajikan.

    Trust me, saya pernah coba bikin sambal ini di Jepang hanya berdasar "pengalaman pernah makan" di rumah makan padang di jakarta. saya kira-kira bahan-bahannya ini itu, dan ternyata berhasil. Bahan-bahan yang saya pakai persis plek dengan yang ditulis mister Nico, cuman karena di sini jeruk nipis tidak ada, saya ganti yang mirip banget (mungkin sama atau satu keluarga, ya? ) yang kalau di sini disebut dengan "sudachi".

    Coba sedikit dikasih teri kecil yang tawar, digoreng lebih dulu 3/4 matang (sudah matang tapi masih agak alot. Wuih pas dimakan, mak nyuusssss...... pedes gurih, ngabisin nasi, Om Nico tambah montok ha.. ha.. ha...

    Ya itulah kalau emang punya urat inovative....hehehehe.... hanya sekedar nyicipin ajah, tau2 udah bisa ngira2 apa aja bahan2 dasarnya...hehehe....


    Tapi kalau yang urusan montok ya jangan keras2 duuunk om Bowo.....hahahahaha......

    Back to topic,
    kalau hanya cabe ijo, kan mungkin agak kurang pedas. kalau dimasuki juga cabe rawit sedikit, bisa merubah rasa, gak? Di sini, cabe ijo itu nggak pedes, sebab kayaknya cabe ijo di sini itu lebih dekat ke keluarga paprika atau kalau di sini disebut dengan "shishito".

    Dulu itu saya buatnya pas ada cabe ijo, yang sebenarnya bukan cabe ijo beneran tapi cabe merah besar yang masih ijo hasil nanam di halaman rumah mertua

    Om Bowo, kalau di tambahin cabe rawit juga gak apa2 kok om... Rasanya akan sama saja hanya lebih pedas.

    Terus waktu om Bowo buat pake cabe merah besar tapi yang masih "balita" dan hasilnya gak pedas, kemungkinan ya karena memang cabenya itu masih muda om.... Biasanya cabe muda itu rasa pedasnya kurang "nendang" om... Beda ama janda muda...wakakakakak....
